At the farmers Markets, he would greet everyone with his Australian charm, combining his smoked delicacies on platters or bagels for all to enjoy. Wahoo looks like king mackerel. The flesh of the wahoo fish has a mild, sweet-tasting flavor. Its beautiful white flesh is firm, and it produces large circular flakes when cooked. Smoked wahoo may be eaten alone or served with a variety of foods and dishes. It’s just delicious.
